MUSHROOMS IN TOMATO PUREE

This dish can be considered a delicacy, especially when it was prepared from young whole mushrooms.

After boiling, the mushrooms are stewed in their own juice or with the addition of vegetable oil. After softening the mushrooms, puree made from fresh tomatoes is added to them, the consistency of which resembles the consistency of cream. It is also acceptable to use ready-made 30% puree, which must be diluted in advance with water in a ratio of 1:1.

After thorough mixing of the puree, 30-50 grams of sugar and 20 grams of salt are added to it. When the puree is mixed with stewed mushrooms, it all fits into jars.

In the process of preparing this delicacy, it is necessary to take 600 grams of mashed potatoes for every 400 grams of mushrooms. In addition, about 30-50 grams of vegetable oil is used. As spices, you can add a few bay leaves, you can also add a little citric acid or vinegar to the mixture. After this, the mushrooms are sterilized, while the water should be moderately boiling. Sterilization time is 40 minutes for half-liter jars, and an hour for liter jars. When sterilization is complete, jars should be quickly sealed, checked for secure seals, and cooled.
