This variety of lamb is characterized by being a rich and tasty meat, which is usually cooked roasted and shredded or stewed in chilindrón or stew. In addition to the taste, it has health advantages, since the lamb from Aragon has up to a 8% less fat than other types of lamb.

The lambs are raised in Aragonese territory, taking advantage of both the mountain pastures as the most arid areas.
